Classic (French) Crepes

A crêpe (pronounced /kreɪp/) is a type of very thin, cooked pancake usually made from wheat flour. There are usually two types: sweet crêpes (crêpes sucrées) made with wheat flour and slightly sweetened, and savoury galettes (crêpes salées) made with buckwheat flour and unsweetened. This is a my variation of the basic recipe which allows you to create sweet or savoury crêpes depending on what you put inside.

  • 3 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/2 tsp salt
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil


  • Mix together all ingredients and let stand 30 to 45 minutes before cooking crepes. 
  • In a very hot pan, pour 1/4 cup of batter and swirl around. Cook about 2 minutes per side. 
  • Roll topping inside and powder with sugar or drizzle with maple syrup. 


You can make this recipe ahead and freeze using a layer of parchment paper in between each crêpe.
